So, there's this tiny restaurant chain called Yats, that I think is pretty much contained in Indiana. It's like... theoretically cajun almost fast food (the setup is a little like Moe's or Chipotle). We had one and they were epic and then they closed and I was all sad because they had this amazing chili cheese etouffee. So after much whining and scouring the internet, I found the recipe and made it and it was just as epic as I remembered and so I was spazzing at greedy_lover about it and she aasked me to post the recipe... so I am. No pictures because umm... I didn't think to take any before I ate it.
